Degussa Introduce Emulsifier for Fine Pâtés

Degussa say that with the introduction of EMULTOP as a natural emulsifier for pâtés and liver sausages, health-conscious consumers will no longer need to cheat on their diet when eating indulgent meat products of that kind.
EMULTOP is an all-natural lecithin product based on vegetable oilseeds such as soybeans. Lecithin is a food ingredient traditionally considered to have nutritionally beneficial effects, for which it is also widely used in dietary supplements.

In addition, although it is used at a very low dosage level, it ensures that the fat is kept evenly dispersed throughout the product, thus preventing separation during cooking.
