Cerestar expand in soy
The soy flours in the range include C*Protall, whole bean soy flour (full fat soy flour), including soy grits and the toasted and enzyme active soy flour, C*Prolia, defatted soy flour and C*Prosanté, textured soy flour.
Cerestar Food & Pharma Specialties Europe has launched a complete range of functional soy products for the bakery market. The soy flours in the range include C*Protall, whole bean soy flour (full fat soy flour), including soy grits and the toasted and enzyme active soy flour, C*Prolia, defatted soy flour and C*Prosanté, textured soy flour.
This move follows last October’s announcement that Cerestar Food & Pharma Specialties Europe has expanded its portfolio to include soy products. Cerestar then took over an extensive range of soy flour, textured soy protein and soy isolate were previously available in Europe through Cargill Soy Protein Solutions, a fellow business unit of Cargill. According to a recent consumer survey, the consumption of soy and dairy beverages in Western Europe grew by 20% in 2002, compared to the previous year. By offering a range of soy products packed with protein and low in fat and with excellent sensorial properties, Cerestar Food & Pharma Specialties Europe said that it expects to contribute to the development of this market.
“In bakery products, healthy foods and many other food applications, soy flour offers proven advantages over animal proteins, including lower cost, increased functionality and greater shelf life. In bakery, soy flour contributes to improved cell structure and crumb, improves water absorption and retention, and functions as a crumb whitener, egg replacement and dough conditioner,” said Mark Wastijn, marketing director of Cerestar Food & Pharma Specialties Europe.
In addition to the functional and economic benefits of using soy protein in various food applications, consumer demand for soy products has increased consistently over the past decade. Recently, this has accelerated with the growing awareness of the nutritional and health benefits of soy protein which continues to drive demand. According to recent consumer survey, the consumption of soy foods in Western Europe has increased with more than 10% in 2003.
