Buisman Partners on Solution for Grilled Meat Appearance

Placing the meat in a steam or hot air oven after a quick tumbling with Carogrill (or even by precooking the meat), then applying the Carogrill emulsion and finishing with a short heat treatment in a traditional oven will do the trick.

Nov 3 2011 --- With the introduction of Carogrill, it is no longer necessary to grill or roast meat to create a grilled sensation. Carogrill, a co-development product of TAIGA International and Buisman Ingredients, makes it possible to add an appetizing grilled appearance to poultry, meatloaf, pork and beef as well as a truly grilled flavor profile with typical meat grill notes. The benefits for meat production on an industrial scale are significant: cost savings by reducing weight loss and high energy consumption, quality improvement while shortening the production time, and reducing health risks that come with burnt meat.

‘A revolution in meat technology’ according to Hans Zijlstra, Business Development Manager at Buisman Ingredients. ‘The consumer demand for barbecue flavoured products is still increasing. In the meantime, severe competition and food safety requirements (burnt meat contains carcinogenic components) force the meat industry to search for efficient, cost reducing yet safe production methods. Carogrill is the solution, both for the consumer market as well as for the food service sector’.

Traditionally, grilling or roasting is a time consuming process, causing product losses due to water evaporation and fat dripping. Furthermore, there is the risk of quality loss due to underheating (pale products) or over heating (Black burnt surface). The energy consumption involved in grilling or roasting is significant. Carogrill ends all these disadvantages. Placing the meat in a steam or hot air oven after a quick tumbling with Carogrill (or even by precooking the meat), then applying the Carogrill emulsion and finishing with a short heat treatment in a traditional oven will do the trick.

‘The secret of the excellent functionality of Carogrill is in the innovative composition of the product’, says Denis Leleu, International Sales Manager of TAIGA International. By emulsifying caramelized sugars from Buisman Ingredients and typical BBQ aroma’s form TAIGA International, we have created a remarkable sensory profile. The Carogrill range offers a veriety of emulsions for every type of meat. Moreover, Carogrill can be declared as ‘aroma’ - no additional E-numbers need to be declared.

Hans Zijlstra: “We are happy to present this innovation at the Food Ingredients Europe exhibition 2011 in Paris. It will be just one of the innovative ingredients based upon caramelized sugar that we launch this year”.
