When using SCANPRO CE 40 in a fat emulsion as an alternative to back fat or fat trimmings, formulation costs can often be reduced.
2 Nov 2009 --- SCANPRO CE 40 is a new high functional protein compound from BHJ Protein Foods. SCANPRO CE 40 has proven to be an excellent alternative to soya isolate providing an animal based solution for meat processors – non-GMO and with no known allergens. In terms of functionality SCANPRO CE 40 binds up to 15 parts of fat and/or water. And it is easy to use as a direct addition into the bowl cutter.
SCANPRO CE 40 is also an excellent fat binder providing a heat-stable emulsion in the finished meat product. When using SCANPRO CE 40 in a fat emulsion as an alternative to back fat or fat trimmings, formulation costs can often be reduced.
Product manager, Carsten Rishøj explains: “I am confident that meat processors will experience that this new product can help ensure consistent product performance in a number of meat applications in a cost-effective way. The high functionality of this product compared with the costs ensures an optimal cost-in-use. And if you are looking for an alternative to soy, SCANPRO CE 40 is certainly a good solution.”
