  • 21 Mar 2023 --- Danish-based Reduced showcased its flavor enhancement umami drops based on upcycled production. The company uses local raw materials that usually goes to waste, such as vegetables that don’t need to fit the criteria in terms of size or appearance to be sold. Jørgensen highlighted two products – the traditional stocks, which are boiled with water and salt, and the fermented version made from chicken. According to the company, both products offer a strong umami flavor made of food waste.

  • 28 Dec 2017 --- One of the key themes at FiE 2017 was sustainability, and AAK is working to be a big part of it. “Sustainability is part of our DNA at AAK, we have been working with sustainability for many years. Now what we are looking into much more is the sustainability of the different oils that we source,” says Mads J Feer. In the past, AAK has focused on the sustainability of palm oil and shea oil, for example. Now, the company is looking to work toward the responsible sourcing of many oils. The company has also developed new movies of several supply chains it is working with.

The solution makes it possible to introduce an authentic preparation process that fits within the modern bakery. FermenSon merely consists of water, flour, sugar, salt and a starter culture. This starter culture is derived from microorganisms, and contains the specially selected yeast strain Saccharomyces cerevisiae from Sonneveld’s sister company, which was established in 1893 Jästbolaget, Sweden.
