Coconut Sugar & Coconut Syrup from Indonesia
November 2015

Our organic coconut sugar is sourced from Indonesia where it is collected
from the sugary sap of the organic coconut palms. We work with over
3,000 farmers who collect the nectar of the flowers and process it into
organic coconut sugar.
Each farmer has an average of 25 trees that they use for collection
and coconut production. The farmers scale the trees, selectively wrap
bundles of coconut palm flowers and collect the nectar into the
bamboo collectors. They are careful to only collect from flower bundles
on specific trees in order to let other trees continue their growth into
mature coconuts. The nectar is collected twice a day, in the morning and
afternoon.
