Rebalancing taste perceptions in F&B as industry evolves 

15 Dec 2023 --- French-owned family business Prova specializes in manufacturing extracts and brown flavors. At this year’s Food Ingredients Europe, the company unveiled an expansion of its Protec functional solutions range, which helps with flavor masking notes from pea and whey protein flavors. Marie Le Beller, product manager at the company, tells us how its experts are also working on new technical solutions, such as rebalancing the sweetness perceptions of food applications, as new taste trends continue to disrupt the industry.

Masking hemp protein offnotes

29 Jul 2019 --- Prova has expanded its flavor masking platform to mask offnotes in hemp-based proteins. The move follow initial work in the pea protein arena, which is now being taken to market. Powder form and organic compliant options are now available for pea protein masking options. “We did an extensive work on pea protein and the natural next step was to go into hemp. We have seen hemp booming everywhere and for us that it was a natural way to further explore this new platform in natural flavor with hemp. Hemp has similar off-notes to pea and we can use our extensive knowledge of masking flavors from pea and applying them to hemp. We are currently in the development phase of that,” says Marie le Beller at Prova. The company is looking at the market and considering the masking of other trending whey proteins, including whey protein.

A new line of flavor masking solutions

23 Aug 2018 --- Prova's line of masking flavors includes flavors specifically designed to mask the off-notes associated with pea proteins. Brian Wilson at the company notes: “Our flavors have been used to mask the off-notes in certain protein products before like whey and casein proteins. But now we are seeing the rise of pea protein and the nutritionals that go along with it. But it is a very harsh protein profile. So what we have done is to really focus on pea protein and really focus on masking these off notes. We have sourced pea proteins from across the globe to come up with a flavor descriptor portfolio and looked to nail down what those descriptor words. We then try to build masking building blocks to best mask these pea proteins we are coming across. It needs to be tailored in terms of the type of protein.”
