Triple Benefits From Purac At IPPE/AMI

Reducing the cost of food safety, cleaning up product labels and helping processors reduce sodium will be Purac’s focus at IPPE in January. With food safety still top of the agenda for the meat and poultry industry, the company will showcase an expanded range of ingredients developed to enable processors reduce their spend while providing highly effective protection against pathogens. Purac will also showcase its ability to reduce sodium up to 30% using label-friendly ingredients.

11 Dec 2012 --- Purac’s Opti.Form product line has been expanded and now comprises seven powerful blends of organic acids which can cut the cost of inhibitor use by up to 75% while maximizing safety levels in mainstream meat and poultry applications. Opti.Form products are highly effective in inhibiting the growth of Listeria monocytogenes. This enhanced product line includes blends, powder blends, and single ingredients and also contains propionates, whose final approval by the USDA is expected at any time. Opti.Form ingredients to be highlighted at the show are Opti.Form Ace P13 - lactate/diacetate (no label changes needed) and Opti.Form Ace P40 - acetate/lactate (no regulatory limits of concern).

 
The Verdad range has been developed to provide label-friendly alternatives to traditional lactate/diacetate products. Labeled simply “cultured (corn) sugar” and “vinegar,” Verdad naturally inhibits a wide range of pathogens, particularly Listeria monocytogenes. In addition to optimizing food safety and prolonging shelf life, certain Verdad ingredients potentiate a salty flavor, enabling processors to reduce sodium by up to 30% while maintaining the same flavor profile as their current products. This is an important benefit for an increasingly health-conscious market. The Verdad range can be used in a wide variety of RTE meat and poultry products.
