This extract is unique in its ability to hold onto water and fat better then current stabilization systems that are in the market place. Studies comparing modified food starches, various fibers and soy extract were conducted. Soy extract functioned superior in mainting yields in ground beef.
Studies were conducted comparing various stabilizers that are currently used for the meat industry. Comparisons of modified food starch and other fibers including oat fiber, rice bran and cellulose were compared in a ground beef application. The Ground Beef had 27% fat. The stabilizers were used at a 2% level. Soy extract showed improved yields for the ground beef. It had superior ability to hold onto both moisture and fat during heat applications compared to the other stabilizers. It also would hold onto moisture in the raw state.
