This cold water functioning starch is a cost-effective solution that boasts thickening, stabilising and texturising properties and a clean label ‘starch’ ingredients listing. As an alternative to instant modified starches, Novation 6260 helps manufacturers upgrade to a clean label, “additive-free” positioning. It also offers significant cost optimisation opportunities for manufacturers already working in the clean label arena. In addition, characteristic of a cold water functioning starch, Novation 6260 delivers further process optimisation by eliminating the costly heating step from production.
Waxy maize-based, Novation 6260 confers instant viscosity, stability and texture to a broad range of cold process food applications. It is rapidly hydrated and disperses easily without lumping to deliver a unique upfront pulpy texture that smoothes out giving a glossy appearance. Versatile in a variety of applications, including sauces, ready meals, gravies, soups, spreads, dairy desserts, dips, dressings and baked goods, its moderate process tolerance ensures good resistance to acid, shear and heat during manufacturing. Compared to traditional native starches, Novation 6260 delivers a superior texture and shelf life stability. Its bland flavour profile allows the richness and diversity of flavours to prevail in soups, sauces and dressings, while in baked goods Novation 6260 displays excellent moisture management capabilities during baking and storage.
