29/07/08 Maxiren Gold is the latest preservative-free innovation from DSM Food Specialties developed to maximise cheese manufacturers’ production efficiency. A 100% pure chymosin – the principal milk clotting enzyme – Maxiren Gold is a superior, reliable milk coagulant which provides high purity, consistent quality and stable enzymatic activity in all varieties of cheese.
Unlike calf rennet, which is traditionally used to coagulate milk in cheese production, Maxiren Gold’s 100% chymosin does not contain any redundant proteases and delivers a pure and concentrated form of the key dairy yeast Saccharomyces (Kluveromyces) lactis. This yeast has been isolated and modified naturally thanks to pioneering DSM technology. Maxiren Gold therefore enables manufacturers to communicate a preservative-free message to consumers – a compelling proposition.
