DMV Makes Patent Application for "Medium fat cream"

13/06/06 DMV International recently made a patent application for use of DMV’s Textrion DELITE in a decoration cream. The patent has been published and is titled “Medium fat cream”. The key benefit of Textrion DELITE is that it helps to lower the ingredient costs by as much as ten percent, while maintaining stability and structure of the (aerated) decoration cream. With this patent application, this proprietary product knowledge is recognised and protected.
Textrion DELITE is one of the innovative ingredients that DMV international has launched under the Textrion brand. Ingredients within this product line provide innovative texture solutions for the ready-to-eat and instant dessert market.

Firmness, mouth feel, stability and whipping ability are important properties that determine the quality of whipped products. “Food scientists working at Innovium, DMV International’s recently opened innovation centre, found that with the use of a specific unsaturated emulsifier, they could lower the fat content while maintaining the organoleptic and stability properties of full fat whipped cream”, states Jan Hendrik Roskam, Patent Manager at DMV International. This finding is now published as WO 2006/038807.
