Carnitas, a traditional Mexican favorite, consists of pork, seasoned and slow-cooked until tender and juicy, and spices. The Baja Fresh version takes those same traditional cuts, then marinates them in a zesty blend of chipotle, pasilla and New Mexican chiles with garlic and onions. The meat cooks slowly for more than five hours to a tender finish, with a little kick.
