IFT FIRST 2023 review: Plant-based NPD triumphs and sugar-reduced concepts shine in Chicago

At IFT FIRST, which took place July 17 to 19 in Chicago, US, alt-dairy and meat innovations took prevalence on the show floor, with trends in protein and fiber fortification, gluten-free, nostalgic flavors and better-for-you decadence garnering attention. Innovations in sugar reduction were abundant, with allulose and soluble corn fiber coming up as star ingredients. Taste enhancers and natural flavor ingredients were also on display to help improve the sensory experience of sugar- and sodium-reduced foods. Precision fermentation and renewable agriculture were also highlighted.
