The current pulses market environment

For their fresh roasted pecans concept, presented at IFT, the flavor supplier took rich and creamy flavor and complemented it with cinnamon spice and slightly sweet caramel flavors and fresh roasted onto pecans – “making for a tempting sweet treat.” The company also presented a cold brew coffee concept and a vinegar-based shrub beverage as a “red rhuby refresher,” where “seedy, fruity strawberry is perfectly complemented by the tart rhubarb stalks.”

Almonds gain greater NPD traction

30 Jul 2018 --- The Almond Board of California (ABC) presented snacking insights and samples at IFT, Chicago. With the latest research and live demonstrations, ABC’s industry and culinary experts were available to address questions about California almonds. Throughout IFT 2018, Chef Rob Corliss of All Things Epicurean was available for individual or small-group California Almond Solution Sessions, offering a deep-dive into the inspiration of this year’s IFT samples and assistance for other almond-related inquiries. Key trends for snacks and confectionery in 2018

26 Feb 2018 --- Innova Market Insights presented the key trends in confectionery at this year’s event. The researcher noted how interest and awareness in health, indulgence and sustainability continues to rise. Further innovation in sugar and chocolate confectionery that takes these demands into account is paramount in order to remain competitive. For example, there was 93% CAGR reported in sugar confectionery launches with a “vegan” claim (Global, 2012-2016). 70% CAGR in gummies/jellies product launches with a “gelatin free” claim (Global, 2012-2016).
