Umami: The Taste Harmonizer

September 2020
--- Famed Chef August Escoffier suspected that an elusive fifth taste, beyond sweet, salty, sour, and bitter, existed on the very edge of our organoleptic awareness. This unique perception, now called umami, is generally recognized as “delicious” but challenging to characterize. It is generally considered a very pleasant taste and has been described as savory, meaty, or even as “intangible euphoria.”
