
Umami: The Taste Harmonizer

--- Famed Chef August Escoffier suspected that an elusive fifth taste, beyond sweet, salty, sour, and bitter, existed on the very edge of our organoleptic awareness. This unique perception, now called umami, is generally recognized as “delicious” but challenging to characterize. Umami can make foods very craveable when executed correctly, in balance with the other four basic tastes. It is generally considered a very pleasant taste and has been described as savory, meaty, or even as “intangible euphoria.”
