Dairy Management Inc. (DMI) has conducted tests to identify flavor issues that need to be overcome when reducing sodium in processed cheese and natural cheeses.

In Cheddar cheese research trials using Nu-Tek reduced sodium salts, evaluators found no significant differences in salty perception and flavor between the control cheese and cheese containing Nu-Tek's reduced sodium salts. Similar results were seen with respect to texture, moisture and shelf-life. This study was conducted at the University of Wisconsin.
