Kampffmeyer Launches Bran Innovation for Mild Taste and Better Mouthfeel
Softbran Don Minus is a milled product made from germinable, healthy wheat. While conventional bran displays a bitter taste and a rough, coarse structure, these disadvantages do not occur with Softbran Don Minus.
26 Nov 2010 --- Kampffmeyer’s innovative bran “Softbran Don Minus” has the same dietary fibre value as conventional bran products, but is milder in taste and displays a significantly better mouthfeel.
Softbran Don Minus is a milled product made from germinable, healthy wheat. While conventional bran displays a bitter taste and a rough, coarse structure, these disadvantages do not occur with Softbran Don Minus. The end product’s visual properties with the desirable visible bran spots, however, remain the same. Softbran Don Minus can replace conventional bran in formulations easily and without further modifications. It is especially suitable for fine baked goods such as bread for toasting, and for breakfast cereals with a high fibre content.
In tests carried out with a sensory panel, the innovative bran was rated very highly. A bread for toasting with five per cent Softbran Don Minus was described as aromatic, slightly nutty and with a fresh wholegrain taste, while the equivalent product with five per cent conventional bran was perceived as neutral, plain, scratchy, spotty, slightly sweet and musty.
For Softbran Don Minus, carefully selected and cleaned wheat batches are used. Apart from the sensory advantages, the microbiological status is also improved, and the heavy metal toxic load is significantly reduced compared to common brans.
Bettina Zeuch, product manager for Softbran Don Minus at Kampffmeyer Food Innovation, says: “This innovative bran product allows for the manufacture of end products with high consumer acceptance – especially from those who are usually bothered by the slightly rough and bitter taste of common bran. Products for elderly people and children in particular could benefit from Softbran Don Minus.”
Softbran Don Minus can easily replace all types of common coarse wheat bran in formulations. It is especially interesting for products that haven't yet been enriched with bran due to taste reasons. Softbran Don Minus can be used in combination with mild wholegrain flour. From a regulatory point of view, this grain product is not an additive but an ingredient, and is thus suitable for Clean Label formulations.
