DSM Food Specialties Debuts Cost-effective and Flexible Barley Brewing Solution

18 Nov 2010 --- Global leader in enzyme technology, DSM Food Specialties has unveiled Brewers Compass – a unique enzyme solution that enables brewers to produce up to 100 percent barley beers of the highest quality. An evolution of DSM’s existing barley brewing enzyme portfolio, this new system is highly cost effective and offers brewers more choice and flexibility when segmenting their portfolio than ever before.
Available as an easy to use liquid solution, low cost in use Brewers Compass is applicable for brewing beers containing anything between 30 and 100 percent barley. By enabling higher percentages of barley to be used without compromising quality, Brewers Compass can reduce the cost of existing beer brands and additional options enable brewers to enter the price sensitive private label and value market segments with high quality products. The optimised blend of enzymatic activities is designed to complement and work synergistically with the enzymes present in barley, to ensure efficient brewhouse operation with quick mash and beer filtration and good fermentability. It also provides robust process control to counter variations in barley grist levels and barley / malt quality. Using barley offers further sustainability advantages to brewers by delivering significant reductions in the carbon footprint of barley brewing compared to malt.
