Chr. Hansen Launches New Natural Red Color
An attractive pink-red shade, excellent stability through shelf-life, and superior process stability qualities that enable a decrease of the pigment concentration by 10 to 20% compared to standard carmine are presented as the benefits.

7/1/2011 --- Chr. Hansen’s new natural color ‘Red Strawberry Fragaria’ is ideal for fermented milk and fruit preparations.
An attractive pink-red shade, excellent stability through shelf-life, and superior process stability qualities that enable a decrease of the pigment concentration by 10 to 20% compared to standard carmine are presented as the benefits of the highly concentrated, water soluble, liquid carmine color are lining up.
‘Red Strawberry Fragaria 100 WS’ which contains 15% carminic acid has been developed for fermented milks and fruit preparations primarily. It gives the manufacturers the opportunity to make visually appealing colored yoghurt or fruit preparations while at the same time lowering color dosage and thereby improving cost-in-use. The solution which challenges standard carmine solutions provides enhanced color consistency due to its exceptional processing stability.
“‘Red Strawberry Fragaria’ is able to endure the processing treatment of the fruit preparations, maintaining excellent fruit staining abilities and coloring ability throughout shelf-life. The outstanding process stability will also mean minimized color variation from batch to batch at the fruit preparation production facility and in the final yoghurt. In addition, the new natural color is user-friendly as it can be added directly to the food product while stirring,” explains Regis Roubille, Technical Industry Manager, Dairy and Fruit Preparations, Chr. Hansen.
A patent application has been filed for the new red color which is produced according to kosher laws. “The solution focuses on the dairy and fruit preparations industries, which have been using natural colors for many years, and we believe that we have set a new natural color standard for strawberry shades for these industries. Not only is the quality improvement indisputable; the lower dosage also involves a number of other benefits such as less volumes shipped, less storage space needed, etc. ? all elements that go hand in hand with Chr.
