HOCHDORF Launches Low-Fat Meat Applications Using Lupin Seed Product

1/17/2011 --- The lupin seed based product Lupidor PF renders the development of fat reduced meat products possible. HOCHDORF Nutrifood Ltd. has recognised weight management products, which show the same sensual properties as full fat products, as one of the key trends in food industry. Thus, they set their mind towards developing several food applications that would allow reducing the fat content of conventional food products.
The key to succeed in designing low-fat products is the in-house developed lupin seed based ingredient Lupidor. Lupidor PF is a lupin concentrate, which is high in proteins and fibres. Based on Lupidor PF a burger and a sausage application were designed.
In the burger application the meat quota is reduced by 35%. Additionally, the water quota was increased by approximately 16%. This not only results in a fat reduced product, but contributes actively towards avoiding the increasing scarcity of the meat resource.
In the sausage application HOCHDORF Nutrifood Ltd. has achieved to lower the fat content by 50%. Even though the fat content was remarkably reduced and the water content increased in both applications, no compromises were made in taste. This is ascribed to the remarkable attributes of the Lupidor ingredient in regards to mouth feel and water binding and emulsifying capacity.
