Dec 7 2011 --- Enzyme manufacturers Biocatalysts Ltd continue to broaden their dairy enzyme range with four new microbial enzymes suitable for use in EMC applications.

They have launched three new microbial proteases, Promod 903MDP, Promod 845MDP & Flavorpro Umami. Promod 903MDP is a protease particularly suited for the manufacture of EMCs where sharp protein notes are required whereas Promod 845MDP is better suited where a low bitter, creamy savoury flavour is required.

The third enzyme in this new range is Flavorpro Umami, specifically designed to produce a strong mature savoury flavour with mouth filling protein notes. Flavorpro Umami can also be used for salt reduction in processed cheese applications. Umami, often described as the fifth basic taste is a pleasant savoury, mouth filling and brothy flavour.

In addition to these new proteases, Biocatalysts have also launched Lipomod 957MDP, a microbial alternative to porcine pancreatin. Lipomod 957MDP has been specifically designed for dairy applications and its flavour profile is similar to the one created by porcine pancreatin, dominated by strong fatty acid notes with sulphur and sweet undertones.

As all of these products are microbial and non-animal derived they are suitable for use in Kosher and vegetarian products and can (with the exception of Promod 903MDP) also be made available as Halal.
