13 Sep 2012 --- AIT Ingredients is launching VitalGlucane H+, a new ingredient, 100% natural, which enables water uptake by dough to be appreciably improved. Depending on the application, using VitalGlucane H+ as a substitute for Guar gum (which is soaring in price) can turn out to be 3 to 4 times more economical.
Beta-glucans are soluble fibres that have the feature of offering significant water absorption power. Produced from the selection of specific varieties of barley, the VitalGlucane range of ingredients is obtained by selective abrasion of barley grains to isolate the layer highest in Beta-glucans.
In addition, Beta-glucans are the only soluble fibres for which the following claim can be made:
"regular consumption of Beta-glucans contributes to maintaining normal blood cholesterol levels". The quantity of Beta-glucans that needs to be incorporated is 3g/day (Sources: FDA 2005, EFSA 2009).
