MANE Launches Range of Herb Flavors for Spring
15 Mar 2017 --- This spring, MANE is launching a new range of natural, fresh herb flavors including basil, coriander, mint, chive, parsley, dill and tarragon.
This range meets current market trends’ demand for more vegetable-based products, as well as ethnic and fusion recipes. Commonly used by chefs, fresh herbs can bring a delicate and fresh note to dishes, or they can convey the full identity of a meal, providing its culinary signature.
Florence Philip, Marketing Manager Culinary & Petfood Flavor Marketing EMEA at MANE, spoke with FoodIngredientsFirst: "Consumers are looking for freshness as it is linked to quality and authenticity. This range is innovative because of the fresh flavor profiles."
Philip notes: "Herbs are more consumed as people tend to prepare more complex or ethnic meals by themselves. However, Consumers are looking for more naturalness and genuine taste profiles."
With its natural and authentic profiles, this range has been tested and approved by MANE’s chefs in a variety of applications such as ready meals, vegetarian products, culinary sauces, cold sauces and snacks. The natural flavors are stable when used and their flavor profile remains unchanged throughout the year.
Reproducing authentic, fresh herb flavors is a challenge for flavorists. To succeed in matching these complex profiles as closely as possible, MANE used two different technologies: extraction and analysis. The extract obtained through supercritical fluid extraction was then analyzed. This precise analysis allows MANE flavorists to recreate natural flavors that are as close as possible to the original herb.
It is this combination of technology and MANE expertise that has given the range its authenticity and freshness.
